Peaches are by far my favorite fruit. This time of year it feels like I have more ripe, perfect peaches than I know what to do with. While peach pie is my own version of dessert-heaven, the time involved isn’t always available. Grilled peaches with ice cream comes together in under 10 minutes with all the flavor of pie but none of the hassle!
Husband has started preseason for football. If/when he comes home during camp, it’s from 12-2 pm. He is tired and rip-roaring hungry. Today after a fairly substantial meal I served us up bowls of this dessert. It’s a perfect week night dessert (or week afternoon in this case) because it kills the need for that “something sweet” after dinner but depending on how much ice cream you use clocks in well under 200 calories.
You’ll see in the picture above that I used a peach and a plum. Though the flavor of both stone fruits was delicious, the texture of the plum didn’t soften the same way the peach did. For instance, I was able to cut into the peach with just the edge of the fork, whereas I needed a knife for the plum. Ignore the photo above and just use peaches! On a side note, my daughter reached a momentous milestone this week. Her first messy bun. As my hair is in a messy bun on the top of my head 98 percent of the time, I felt I should welcome her into my lazy girls’ club.
Grilled Peaches with Ice Cream and Spiced Honey
2 Peaches (or 1 peach and 1 plum), halved and pitted
1 tsp. butter
2 tbsp. honey
1/4 tsp. cinnamon
vanilla ice cream
1. Heat grill pan or grill over medium heat and, when hot, spread butter across surface. If using grill, rub a paper towel dipped in vegetable oil over cleaned grill grates.
2. Place fruit, cut side down, on pan/grill. Cook until golden brown on the bottom (about 6-8 minutes).
3. Meanwhile, heat honey and spices in a small custard cup for about 10 seconds in the microwave. Stir to combine and set aside.
4. Place fruit cut side up in a bowl and top immediately with a scoop of vanilla ice cream. Top with spiced honey and serve.
