This post goes out to one Katie Casey for leaving me a wedge of brie because she didn’t feel like bringing it home last time she was at my house. It also goes out to the Food Network Magazine that I got the idea from.Â
So seriously – this is a four ingredient recipe. More of an idea than a recipe, really. I was actually reading the magazine when my husband said he was hungry, and I basically said “the only thing I will make you is this sandwich, so if you don’t want that then good luck”. He just says yes now when I get like that.
The sandwich was delicious. I love brie but it’s best with a sweet accompaniment. I cut myself little slices and ate them, topped with the apricot jam straight from the jar. It was a nice little party I had.
Brie and Apricot Grilled Cheese
Serves 1Â
2 slices hearty white or wheat bread
1 tbsp. butter
2 oz. brie
about 1-2 tsp. apricot jam or jelly
1. Heat nonstick pan over medium heat. Spread butter on one side of each piece of bread.
2. Top one slice with sliced brie (you can eat the white!), and the other with apricot jam.
3. Put the sandwich together and place in the pan. Reduce heat to medium low and cook until golden on both sides. Slice and serve.
It’s only 10:30 am, and now want to make this sandwich…yum!
Try it with pepper jelly – FANTASTIC!!
