My Staple Recipes

With life with three kids in full gear and a new, unshakable sense that my afternoons with my soon-to-be first grader are fleeting, my kitchen creativity has slowed. I’m not pulling recipes from magazines, perusing blogs and trying to recreate meals I ate out at restaurants. My love for food and cooking is still alive and well, it’s just on the back burner. This is not to say I’m not cooking. I’m cooking all. the. time. It’s just that I’ve comfortably settled in to my “staple” recipes, the ones I pretty much know by heart and my family enjoys.

The main reason I have a cooking blog is so that I can digitally store my favorite recipes and pull them up with ease, and I honestly, I use my own blog all the time. Who you can trust better than yourself? So, this is a short post but I wanted to share with you what we’ve been eating lately. You’ll notice all of these are gluten free – that’s because my husband is eating these recipes. I have narrowed down the GF recipes out there to find ones that I like as much (if not more) than the “normal” versions, so this is a great list to send to any friends who eat GF (especially the banana bread, the pb cookies and the almond flour chocolate chip cookies).

Speaking of Gluten free, two great discoveries. Krusteaz brand makes a brownie mix that’s delicious. When we have to bring dessert somewhere I usually bake off a box of those and serve them warm with ice cream – it doesn’t get better than that. Also for entertaining Krusteaz makes a GF cornbread mix that is SO GOOD (because the first ingredient is sugar) so I’ll make that with chili or soup and everyone’s happy.

Salted Peanut Butter Cookies

Honey Almond Granola Bars (But I sub pb)

PB Rice Krispie Treats (I make these all the time)

Chocolate Cherry Almond BonBons (these truly take 5 minutes)

Almond Flour Chocolate Chip Cookies (I make these at least once a month)

Pecan Pie Bars (my kids call these “bar” and ask for them at least once a week)

Dinners

Pizza Casserole (great way to get rid of contents of your fridge)

Skillet Meatball and Spinach Parmesan

Pumpkin Turkey Chili (it’s actually become my fave chili – it’s not “fall-ish”)

Meaty Minestrone

Sweet and Spicy Beef and Edamame (I make this once a week and it’s my “bring to” for friends with new babies)

Stuffed Pepper Soup

Another dinner we’ve been eating almost weekly is a crockpot chicken curry that is posting next week. Maybe you’re in a rut and if so, I hope you find something here you like!
