Chocolate Chip Cookie Dough Balls

Healthy chocolate chip cookie dough balls. Really beautifully gorgeously healthy chocolate chip cookie dough balls. My friend Melissa who likes to cook and eat like I do told me about a Wegman’s snack that she couldn’t get enough of. I asked her to send me a photo of the ingredients list; an amazing bonus to many Americans asking for “an ingredient list they can pronounce” is that recipes are easier than ever to rip off! The ingredients are listed in order of “most to least” on the back of a package, though in a recipe they are listed in the order they are used. I wrote out a rough draft and got my food processor out. We loved the first attempt – the husband and the kids alike. They were gone before I could give a sample to Melissa.

The second batch was tweaked and I was happy enough with the end result to send her the recipe. She gave it two thumbs up and I have her to thank for a new, amazingly delicious and perfectly healthy family snack that’s gluten and dairy free!

Chocolate Chip Cookie Dough Balls

Makes about 2 dozen

2 c. almond flour

1 c. unsweetened shredded coconut

1/2 tsp. kosher salt

1 tsp. vanilla extract

1 tbsp. refined coconut oil

1/4 c. maple syrup

1/3 c. bittersweet chocolate, chopped

1. Puree almond flour through maple syrup in food processor. Remove to mixing bowl and add chocolate. Stir to combine.

2. Roll into balls and store in airtight container in the fridge.
