Very little to say here except this is my mom’s favorite and she’s made it, consistently, for like, 20 years or something. It escaped my notice until one night at the beach this summer when we all thoroughly enjoyed our dinner and wanted to know the secret to how great the chicken was. My dad would like me to tell you it was the griller, but I’m pretty positive it was the marinade.
Barely any ingredients and couldn’t be easier to put together. You could mess around with other fresh herbs here – oregano, rosemary and thyme would all be good because they’re woody, hearty herbs that can stand up to the grill. Happy grilling.
Easy Chicken Marinade
1 egg
1/2 c. oil (avocado, vegetable or olive oil)
1 c. apple cider vinegar
1 tbsp. kosher salt
1/2 tsp. ground black pepper
1 tbsp. finely chopped fresh sage
- Whisk all ingredients together and marinate meat, at least 30 minutes or up to several hours. Baste over meat while grilling (but not at end – salmonella and whatnot).
