Creamy Caesar Dressing

The reason I keep this site (and don’t monetize it) is so that all my favorites are in one place. If I don’t keep one and want to make it again I find myself going down that internet rabbit hole, making something different, and pouting in my regretful memories of that first, much better version. Got lucky this time – I found it. Saving it here so that won’t happen again. Caesar is THE EASIEST salad for both entertaining and when told to “bring a salad”. Why? It’s chopped romaine hearts, this dressing, and a bag of store bought croutons. I’ve added cherry tomatoes in the past but even that is unnecessary. Homemade croutons would certainly jazz it up but, again, the focus here is ease. We had a big pizza night around Christmas (I made 10 pizzas on my new Ooni pizza oven – baptism by fire) and had the lettuce chopped and covered with plastic and this dressing in a mason jar. I’d forgotten the salad in the pizza madness but the time between remembering and serving was mere minutes. This dressing is perfection but in my haste, I overdressed. That’s my one tip – a little bit of this goes a LONG way. Don’t thin it with water, just keep tossing that lettuce in a small amount of the dressing till it’s fully dispersed.

Creamy Caesar  Dressing 

Makes 2 cups

2 garlic cloves, minced

1 tsp. anchovy paste

Juice of one lemon

1 tsp. dijon mustard

1 tsp. Worcestershire

1 c. light or regular mayonnaise  (or avocado oil mayonnaise for lectin free)

1/2 c. grated pecorino romano

1/4 tsp. kosher salt

1/4 tsp. black pepper

  1. Whisk all ingredients together and refrigerate in air tight container.
