Bacon and Leek Pizza

Hurricane Party! I was REALLY craving some homemade pizza. Like, it was almost all I could think about. Saturday night turned into a hurricane pizza party with the imminent arrival of Irene. I was going to make one “plain” since we had a toddler coming, one eggplant, one jalapeno, and one fun “white” pizza. I heart sweet and salty on pizza, and I’d read about a bacon and leek version before— plus I had some bacon in the freezer—done!

Leeks are a type of onion that is pretty mild and when sauteed, gets very sweet. They can be daunting when you see them at the store, so I took plenty of pictures of the prep work involved. It’s not hard, you just need to know how to work ‘em.

Bacon and Leek Pizza

Homemade dough (or store bought)— go to my pizza section and if you have time, do the overnight rise dough. If not, do the dough in the bbq chicken pizza— it’s super quick.

2 tbsp. butter

3 leeks, chopped, white and light green parts only

1 tsp. salt

1/2 tsp. pepper

8 slices bacon

3 tbsp. olive oil

Salt and pepper- sprinkled to taste

1 c. grated mozzarella

1/4 c. freshly grated Parmesan

1. Wash and prepare leeks.

Trim the muppet baby heads off

Trim off the obviously green parts

Now to clean; salad spin! Wash thoroughly and then spin dry. 

2. Cook bacon and crumble.

3. Melt butter in skillet. Add leeks, salt and pepper. Saute until soft and sweet.

4. Preheat oven to 475 degrees and heat pizza stone, at least 30 minutes.

5. Roll out pizza dough on parchment paper. Spread olive oil over dough (all the way to edges) and sprinkle with salt and pepper to taste.

7. Sprinkle some cheese down, and then top with some of the cooked leeks and bacon.

7. Add more cheese and leeks/bacon as you see fit.

8. Top with parmesan cheese and another quick sprinkle of salt and pepper.

9. Bake on pizza stone for 10-14 minutes, until edges are light brown and cheese is bubbling.

This was SOOO good.. just looking at these pictures two days later makes me wistful and even a bit melancholy. I want it nooowww.
